HVH-100E ELECTRIC HYDROVECTION OVEN
- The Blodgett Hydrovection is the only split door, continuously humidified oven on the market. With its compact 38” footprint, the same as your convection oven, the Hydrovection saves space in your kitchen. The Hydrovection allows you to do more, bake, roast, gratinate, poach … in less space. Hydrovection, it’s practically a Combi at half the price! HVH Hydrovection ovens feature Blodgett’s patented Helix Technology which forces air into the oven cavity evacuating laden moisture, improving product quality while reducing cook times. Helix offers up to 30% faster cook times and 20% better yields on existing recipes.

- Triple mounted door design with turnbuckle assembly
- 304 stainless steel coved corner liner for easy cleaning
- Hand shower for ease of cleaning
- Two halogen interior lights for superior visibility

- Hot air cook mode for baking and pastries
- Hydroburst feature for shot of 100% humidity at any time during the cook cycle
- Core probe cook and hold capabilities with 4” removeable fillet core temperature probe
- USB connection for recipe upload or download
- Four speed auto-reversing fan motor for even bake
- Cavity vent control provides ability to release steam at the push of a switch
- Includes factory paid startup
